Sp26-NUTB-0238-01-Economics of Food, Agr. & Nutr

This course helps students explain, predict and evaluate change in consumer behavior, agricultural production and food businesses, government policies and nutritional outcomes. The first half is a gentle introduction to economic principles, using analytical diagrams to represent individual choices and interactions between people. The second half is data analysis, using Excel to construct charts and tables using downloadable data from a variety of sources about food, agriculture and nutrition in the U.S. and worldwide. Presentation and discussion in class is reinforced by weekly exercises followed by either exams or a course project, building skills needed for careers in nonprofit organizations, for-profit enterprises and government agencies.
